Mmm...noodles

Not too many Chinese restaurants in Vancouver serve real hand-pulled noodles. Hand-pulled noodles are a northern Chinese specialty. The texture is richer, chewier, than regular noodles and making the noodles is a very labor-intensive process. The noodle maker works with the dough, pulling it with his hands, stretching it longer and longer, and alternating the pulling with twists, whacks, and flouring. Eventually with each twist, the dough separates into thinner and thinner strands.

The finished product, and he was happy to show it off. These noodles are fantastically long and fun to eat.

Hhand-pulled noodles is great. Vancouver is famous for the chinese food. Are you by chances Chinese, too?

Hey, so uhm.. are you going to tell us what restuarant this is, or is it a secret?

The only place I've been that does this sort of thing is Sha-lin noodle on Broadway. Yum!

This was at Shanghai River, a Shanghainese restaurant on Westminster & No. 3 road, Richmond. Yummers.
